Description
Skirt steak is a cut of beef or bison from the diaphragm muscle, located between the rib cage and the loin. It is a thin and long cut of meat, with fibers running in a single direction. The diaphragm muscle is used for breathing, so the meat is relatively lean but has a notable amount of connective tissue. Skirt steak is often marinated and grilled or seared quickly, and can be enjoyed on its own or used in a variety of dishes such as fajitas, tacos, or steak sandwiches. The muscle fibers in skirt steak contain a high concentration of myoglobin, a protein that stores oxygen in muscle tissue, giving the meat a rich, red color.
